To celebrate five years since our first rum release, please join us at Elora Distilling Company on November 21st for an exclusive Rum Seminar featuring Michael Delevante, former Head Distiller at Appleton Estate and McGuinness, with more than 60 years of experience in the spirits industry. Hosted alongside Paul Lachowich, Founding Distiller at Elora Distilling Company, this special event offers an opportunity to explore the art, science, and craft of rum production with two experienced distillers.
This very special educational collaboration will include a seminar led by Michael (An Introduction to Distillery Practices), a tour & tasting led by Paul, a rum blending competition, and a small reception at the end to continue the conversation over a cocktail. A max of 10 VIP spaces are available, and include an etched tasting glass, and a 30 minute meet and greet and Q&A with Michael and Paul at the barrels before the event begins.

Inspired by Canada’s historic rum trade, Elora Distilling Company is bringing two rum-making traditions together in an exclusive amber rum collaboration between Delevante, a veteran of the Caribbean rum industry with more than 60 years of experience, and Lachowich, award winning architect of the best selling Ontario made spiced rum.
Combining Michael’s deep knowledge of Caribbean rum-making with Paul’s expertise in distilling rum in Ontario, The collaboration blends Caribbean rum with rum distilled in-house at Elora Distilling Company The result is a distinctive collaboration that pays tribute to rum’s historic connections to Canada while showcasing the knowledge, vision, and expertise of two generations of distillers.
Seminar attendees will have the exclusive opportunity to purchase one bottle of this special rum for $60, while a very limited number of additional bottles will be available to the public for $75 per bottle. This release will be available to purchase in-store only at this time, with no online sales.
