VI SIX Cherrywood Finished Whisky

For centuries, spirits have matured slowly in oak barrels. While tradition has shaped beloved spirits like whiskey and rum, VI SIX takes a scientific approach to reimagine the aging process. Rooted in Toronto Metropolitan University’s Lab2Market program, VI SIX utilizes cutting-edge methods to accelerate and enhance maturation, crafting spirits that maintain the romance of barrel aging while exploring new depths of flavour.

We collaborated with VI SIX to create these unique expressions of our Royal Amber Whisky. Made entirely from local grain and aged in new oak hand wood fired Kelvin Cooperaage barrels for three years before 3 months in Vi Six’s secondary aging process, this whisky now features a Cherrywood or Maplewood finish, thanks to VI SIX’s proprietary, top-secret maturation technology. The result is a whisky with enhanced depth, complexity, and smoothness.  With only 100 bottles available of each finish, this is a rare chance to experience something truly special.
